You can optionally add some turmeric powder and cinnamon powder. · Adding eggs helps in removing the kokis from the mould easily at once, further enhance the taste. · Heat oil and wait for bubbles to appear. Then, place the kokis mould in the oil for a few seconds to warm it up. · Gently dip the mould into the batter (except upper surface) and reposition it in the oil without submerging it completely. · You can manage our kokis mould freely in angles whatever the position of the pan or you are. · Be cautious not to let the mould touch the bottom of the frying pan otherwise, the kokis will have a flat base. · As the kokis begins to separate from the mould, use wooden stick to detach it completely into the oil and continue frying until it turns golden brown. · Initially, prepare 1-2 kokis to test the consistency. If needed, adjust the mixture by adding more coconut milk and salt for taste. Once the kokis are ready, remove them from the oil. · Be careful while the frying process in heating oil, at your own pace. Repeat this process with the remaining batter. · Those cooked Kokis cookies can be stored airtight and used more than 10 days without a change of taste or aroma.
